Instructions

1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch round cake pan.

2. In a medium bowl, sift together the flour, baking powder and salt. In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla. Beat in the flour mixture alternately with the milk; mix until just blended. Pour batter into the prepared pan.

3. Bake for 25 to 30 minutes in the preheated oven, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool in the pan for 10 minutes, then turn out onto a wire rack and allow to cool completely.

4. To make the filling and topping, melt butter in a saucepan and stir in both sugars and the water. Bring to a boil and simmer for 5 minutes. Remove from heat and stir in the brandy or sherry. Add the raisins, currants and candied fruit. Set aside to cool.

5. Cut the cake horizontally in half, and spread the filling over the bottom half. Place the top half of the cake on top of the filling. Pour the remaining liquid over the top of the cake. Allow the cake to soak for at least 2 hours before serving.
