Ingredients

For the Cake:

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup cocoa powder

  • 1 cup buttermilk

  • 4 cups confectioners’ sugar
  • 1/4 cup heavy cream

  • 1/4 cup caramel sauce
  • 1/2 teaspoon salt

For the Topping:

  • 8 Twix Bars, chopped
  • 1/2 cup chocolate chips

Instructions

To Make the Cake:

Preheat your oven to 350°F and lightly grease two 8-inch round cake pans. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda and salt. Add the eggs, buttermilk, vegetable oil and vanilla extract and mix until combined. Slowly add the hot coffee and mix until everything is evenly incorporated. If desired, you can stir in the chocolate chips. Pour the batter evenly into the prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool completely before frosting.

To Make the Frosting:

In the bowl of a stand mixer fitted with the paddle attachment, beat the butter on medium-high speed until light and fluffy. Turn the mixer to low and slowly add the confectioners’ sugar, heavy cream, vanilla extract and caramel sauce. Increase the speed to medium-high and beat until the frosting is light and fluffy. If the frosting is too thick, add more cream or caramel sauce. If it’s too thin, add more confectioners’ sugar.

To Assemble the Cake:

Place one of the cakes on a cake stand or plate and spread a generous amount of frosting over the top. Place the second cake on top and spread the remaining frosting over the top and sides of the cake. Sprinkle the chopped Twix bars and chocolate chips over the top of the cake. Slice and serve.
