Instructions

Preheat oven to 350°F. Grease and flour three 9-inch round cake pans. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. In a large bowl, beat butter and granulated sugar with an electric mixer on medium speed until light and fluffy. Beat in eggs one at a time, then beat in vanilla extract. With mixer on low speed, add flour mixture in three batches, alternating with two additions of buttermilk, and beating until combined after each. Divide batter evenly among prepared pans and bake until a toothpick inserted in center of each layer comes out clean, about 18 minutes. Let cool in pans on wire racks for 10 minutes, then turn out onto racks and let cool completely.

In a medium bowl, stir together strawberries and strawberry spread or jam. Place one cake layer on a cake stand or serving platter. Spread top of layer with one-third of strawberry mixture. Top with second layer and spread with another third of strawberry mixture. Top with remaining layer, then spread remaining strawberry mixture on top and sides of cake. Dust with confectioners’ sugar and serve.
