For the ganache:

  • 1/2 cup (115g) heavy cream
  • 1 cup (170g) semi-sweet chocolate chips

Instructions

Make the Cake

Preheat oven to 350°F (175°C). Grease an 11x17-inch (28x43cm) rimmed baking sheet and line it with parchment paper. Set aside.

In a large bowl, beat eggs with an electric mixer on medium speed for about 1 minute. Add melted butter, sugar, vanilla, and salt. Beat on medium speed until the mixture is light and creamy, about 2 minutes.

In a separate bowl, whisk together flour, cocoa powder, and baking powder. Add dry ingredients to the egg mixture and beat on low speed until just combined. Pour the batter into the prepared baking sheet and spread it into an even layer.

Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool completely in the pan.

Make the Filling

In a medium bowl, beat butter with an electric mixer on medium speed until light and creamy, about 2 minutes. Add powdered sugar, coffee powder, and cream. Beat on low speed until just combined.

Spread the filling over the cooled cake. Starting at one of the short ends, roll up the cake into a log shape. Secure the roll with a few toothpicks.

Make the Ganache

Place the chocolate chips in a medium heatproof bowl. Heat the cream in a small saucepan over medium heat until it just starts to simmer. Pour the hot cream over the chocolate chips and let sit for 1 minute. Whisk the mixture until the chocolate is completely melted and the ganache is smooth. Let cool for about 15 minutes before using.

Spread the ganache over the top and sides of the cake roll. Let the ganache set before serving. Enjoy!
