Instructions

Day 1

In a large bowl, combine the currants, sultanas, raisins, and glace cherries. Finely grate the zest of two oranges, then add the juice to the bowl. Pour in the whisky, stir, and cover the bowl with cling film. Leave to soak overnight.

Day 2

Preheat the oven to 150°C/gas mark 2. Grease and line a 20cm round cake tin with baking parchment. In a large bowl, cream together the butter and dark muscovado sugar until light and fluffy. Beat in the eggs, one at a time. Sift in the flour, cinnamon, and nutmeg. Add the soaked fruit, and mix until fully combined.

Spoon the cake mixture into the prepared tin and level the surface. Scatter the blanched almonds over the top, and sprinkle with the demerara sugar. Bake for 2-2 1/2 hours, or until a skewer inserted into the centre of the cake comes out clean. Leave to cool in the tin.
