Ingredients

  • 2 and 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, at room temperature
  • 1 and 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons red food coloring
  • 1/2 cup sour cream
  • 1/2 cup buttermilk
  • For the Chocolate Frosting:
  • 1/2 cup unsalted butter, at room temperature
  • 3 and 1/2 cups powdered sugar
  • 3/4 cup cocoa powder
  • 1/2 teaspoon salt
  • 4-6 tablespoons heavy cream or half-and-half
  • 1 teaspoon vanilla extract

Instructions

Preheat oven to 350 degrees F. Grease and flour two 9-inch round cake pans. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

In a large bowl, using an electric mixer, beat together the butter and sugar until light and fluffy. Add the eggs, one at a time, and mix until combined. Add the vanilla extract and food coloring and mix until combined. Add the sour cream and mix until combined. With the mixer on low speed, slowly add the dry ingredients, mixing just until combined. With the mixer still on low speed, slowly add the buttermilk and mix until combined. Divide the batter evenly between the prepared cake pans.

Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pans for 15 minutes, then remove and let cool completely on a wire rack before frosting.

For the Chocolate Frosting:

In a medium bowl, using an electric mixer, beat together the butter and powdered sugar until combined. Add the cocoa powder and salt and mix until combined. With the mixer on low speed, slowly add the cream and mix until combined. Add the vanilla extract and mix until combined. If the frosting is too thick, add a few more tablespoons of cream. If the frosting is too thin, add a few more tablespoons of powdered sugar.

To assemble the cake, place one of the cakes on a plate or cake stand. Spread the frosting over the top, then top with the second cake. Spread the remaining frosting over the top and sides. Serve immediately, or store in an airtight container in the refrigerator for up to 3 days.
