Ingredients

- 2 cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ cup vegan butter, at room temperature
- 1 cup sugar
- 4 teaspoons vanilla extract
- 1 cup almond milk
- 1 (14-ounce) can coconut cream
- 1 (14-ounce) can full-fat coconut milk
- 1 (14-ounce) can sweetened condensed coconut milk
- 1 cup fresh coconut flakes, for garnish

Instructions

1. Preheat oven to 350°F. Grease a 9x13-inch baking pan with vegan butter and set aside.

2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.

3. In a large bowl, cream together vegan butter and sugar until light and fluffy. Add in vanilla extract and almond milk and mix until well combined.

4. Slowly add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

5. Pour the batter into the prepared baking pan and spread evenly. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

6. While the cake is baking, make the coconut milk mixture. In a medium bowl, whisk together coconut cream, full-fat coconut milk, and sweetened condensed coconut milk.

7. When the cake is finished baking, let cool for 5 minutes. Using a skewer or fork, poke holes all over the top of the cake. Slowly pour the coconut milk mixture over the top of the cake, making sure to get it into the holes. Let cool completely.

8. Top the cake with whipped topping and fresh coconut flakes. Store any leftovers in the refrigerator for up to 3 days.
