Instructions

In a large bowl, beat together the eggs, buttermilk, oil, butter, sugar, vanilla extract, and red food colouring until light and fluffy. Slowly add the dry ingredients to the wet ingredients and mix until combined. Divide the batter evenly between the two cake pans and bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cakes to cool completely. In a medium bowl, beat the heavy cream until stiff peaks form. In a separate bowl, beat together the cream cheese and powdered sugar until smooth. Gently fold the whipped cream into the cream cheese mixture.
