Instructions

Making the Cake

  1. Preheat oven to 350 degrees F and grease two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda and salt.
  3. In a separate bowl, cream together the butter and sugar until light and fluffy.
  4. Add the eggs, one at a time, beating well after each addition.
  5. Add the vanilla extract and mix until combined.
  6. Add the flour mixture in three parts, alternating with the buttermilk in two parts.
  7. Divide the batter between the two prepared cake pans.
  8. Bake for 25 to 30 minutes, or until a toothpick inserted in the center of the cake comes out clean.
  9. Remove from oven and cool for 10 minutes in the pans, then turn the cakes out onto a wire rack to cool completely.

Making the Frosting

  1. In a large bowl, cream together the cream cheese, butter and vanilla extract until light and fluffy.
  2. Add the confectioners' sugar and mix until smooth.

Assembling the Cake

  1. Once the cakes are cooled, place one of the layers on a cake plate or serving platter.
  2. Spread the strawberry jam evenly over the layer.
  3. Place the second layer on top of the jam.
  4. Spread the frosting over the top and sides of the cake.
