Ingredients:

For the cakes:

  • 1 cup (2 sticks) butter, softened to room temperature
  • 2 1/2 cups granulated sugar
  • 4 large eggs
  • 1/2 cup vegetable oil
  • 2 tablespoons red food coloring
  • 2 teaspoons vanilla extract
  • 1 cup buttermilk
  • 3 1/2 cups all-purpose flour
  • 2 tablespoons cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 tablespoons distilled white vinegar

For the frosting:

  • 2 cups (4 sticks) butter, softened to room temperature
  • 2 tablespoons red food coloring
  • 8 cups confectioners’ sugar
  • 1/2 cup heavy cream
  • 2 teaspoons vanilla extract
  • 2 tablespoons cocoa powder

Instructions:

Start by preparing the cakes. Preheat the oven to 350 degrees. Grease and flour two 9-inch round cake pans. Using an electric mixer, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time. Then add the oil, red food coloring, and vanilla extract. In a separate bowl, combine the flour, cocoa powder, baking soda, baking powder, and salt. Alternate adding the dry ingredients and the buttermilk to the wet ingredients until just combined. Lastly, add the vinegar and stir until combined. Divide the batter evenly between the two pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

While the cakes are baking, prepare the frosting. Using an electric mixer, beat together the butter, red food coloring, and cocoa powder until combined. Slowly add the confectioners’ sugar, alternating with the cream and vanilla extract. Beat until the frosting is light and fluffy. When the cakes are done baking, let them cool completely before frosting.

To assemble the cake, place the first layer on a cake stand or plate. Spread a generous amount of frosting on top of the cake. Place the second layer on top of the first layer and spread frosting on top and sides of the cake. Decorate with sprinkles or additional frosting as desired. Enjoy!
