Viennese Coffee Cake is a classic dessert that is popular in Vienna, Austria. It is a moist and fluffy cake that is filled with a creamy coffee-flavored frosting and topped with a light and airy meringue. It is a great dessert to make for special occasions, such as birthdays and anniversaries, or for an after-dinner treat.

Ingredients



For the Cake:

• 2 cups all-purpose flour
• 2 teaspoons baking powder
• 1/2 teaspoon salt
• 1/2 cup butter, softened
• 1 cup sugar
• 2 eggs
• 1 teaspoon vanilla extract
• 1 cup milk

For the Frosting:

• 3 tablespoons butter, softened
• 3 tablespoons instant espresso powder
• 2 cups powdered sugar
• 2 tablespoons milk

For the Meringue:

• 2 egg whites
• 1/2 cup sugar

Instructions



1. Preheat oven to 350°F. Grease and flour a 9-inch round cake pan.

2. In a medium bowl, whisk together the flour, baking powder and salt. Set aside.

3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.

4. Gradually add the dry ingredients to the creamed mixture, alternating with the milk. Beat until just blended.

5. Pour the batter into the prepared pan and bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.

6. To make the frosting, cream together the butter, espresso powder, powdered sugar, and milk in a medium bowl until smooth. Spread the frosting over the cooled cake.

7. To make the meringue, beat the egg whites in a medium bowl until soft peaks form. Slowly add the sugar, beating until stiff peaks form. Spread the meringue over the frosted cake.

8. Bake for 15 to 20 minutes, or until the meringue is golden brown. Allow the cake to cool before serving.
