Cake

  • 225g/8oz butter, softened
  • 225g/8oz light brown sugar
  • 4 large eggs
  • 225g/8oz self-raising flour

  • 225g/8oz mixed dried fruit
  • 100g/4oz glacĂ© cherries, chopped
  • Zest of 1 lemon
  • 2 tablespoons brandy

  • 1 tablespoon brandy

Instructions

Cake

Begin by preheating your oven to 160°C/325°F/Gas Mark 3 and greasing and lining a 20cm/8 inch spring-form cake tin. You’ll also want to mix together the dried fruit, glacĂ© cherries, and lemon zest in a small bowl.

Next, cream together the butter and sugar in a large bowl until light and fluffy. Then, add in the eggs, one at a time, beating well between each addition. Once the eggs are fully incorporated, fold in the flour and baking powder until everything is combined. Then, stir in the prepared dried fruit mixture as well as the brandy.

Once everything is mixed together, spoon the batter into the prepared tin and spread out evenly. Bake in the preheated oven for 1 hour. After 1 hour, check the cake to see if it’s done. If it’s not done, bake for an additional 10-15 minutes, or until a skewer inserted into the centre of the cake comes out clean. Once done, remove from the oven and allow to cool completely before adding the marzipan topping.

Filling and Topping

While the cake is cooling, prepare the marzipan by rolling it out on a lightly floured surface. Roll it out to around 0.5cm/¼ inch thick. Once the cake is cooled, place the marzipan over the top and press down lightly. Brush the top of the marzipan with the apricot jam and then sprinkle with the brandy. Place the cake back in the oven for 10 minutes to allow the marzipan to set.

Once the marzipan is set, remove the cake from the oven and allow to cool completely before serving. The cake can be stored in an airtight container for up to a week.
