Instructions

Step 1: Preheat the Oven



Preheat oven to 350°F (177°C). Grease and flour a 9-inch round cake pan.

Step 2: Prepare the Cake Batter



In a medium bowl, sift together the flour, baking powder, and salt. Set aside. In a large bowl, cream together the sugar and butter until light and fluffy. Beat in the eggs, one at a time, then mix in the vanilla extract. Add the dry ingredients in three batches, alternating with the buttermilk, until the batter is smooth. Pour the batter into the prepared pan and bake for 25-30 minutes, until a toothpick inserted into the center comes out clean. Step 3: Prepare the Filling



In a large bowl, beat the heavy cream until stiff peaks form. Add the vanilla extract and confectioners’ sugar and beat until combined.

Step 4: Assemble the Cake



Place one layer of the cake on a serving plate. Spread ½ of the filling over the top. Place the second layer on top, then spread the remaining filling over the top and sides of the cake. If desired, decorate with fresh fruit.
