Ingredients



For the Cake:
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup milk


For the Toffee Filling:
  • 1 cup toffee bits
  • 1/4 cup butter, melted
  • 2 tablespoons light corn syrup


For the Whipped Cream Topping:
  • 1 cup heavy cream
  • 2 tablespoons confectioners' sugar
  • 1 teaspoon vanilla extract

Instructions

Preparing the Cake Layers:

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans and set aside.

In a medium bowl, sift together the flour, baking powder and salt. Set aside.

In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.

Add the dry ingredients to the wet ingredients in thirds, alternating with the milk, until all ingredients are well combined. Divide the batter evenly between the two prepared cake pans and bake for 25 to 30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

Allow the cakes to cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.

Making the Toffee Filling:

In a medium bowl, combine the toffee bits, melted butter and corn syrup. Stir until combined.

Spread half of the toffee mixture over the top of one of the cooled cake layers. Top with the second cake layer and spread the remaining toffee mixture over the top.

Making the Whipped Cream Topping:

In a medium bowl, beat the cream until soft peaks form. Add the confectioners' sugar and vanilla extract and continue to beat until stiff peaks form. Spread the whipped cream over the top of the cake.

Slice and serve the cake. Enjoy!
