Simple Small Pound Cake Recipe
Ingredients
This simple small pound cake recipe is the perfect dessert to make when you don't have a lot of time but still want something special. For the cake, you will need: 1/2 cup butter, softened; 1/2 cup white sugar; 2 eggs; 1 teaspoon vanilla extract; 1 cup all-purpose flour; 1 teaspoon baking powder; and 1/4 teaspoon salt. For the glaze, you will need: 1 cup confectioners' sugar; 2 tablespoons milk; and 1/2 teaspoon vanilla extract.
Instructions
To begin, preheat the oven to 350 degrees Fahrenheit. Grease a 9x5-inch loaf pan and set aside. In a medium bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking powder, and salt; stir into the creamed mixture. Spread evenly into the prepared pan. Bake for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool in the pan for 10 minutes, then turn out onto a wire rack and cool completely.
Glaze
To make the glaze, combine the confectioners' sugar, milk, and vanilla extract in a small bowl. Mix until smooth. Drizzle over the cooled cake. Let the glaze set before slicing and serving.
Serving
This small pound cake is best served fresh, either alone or with a dollop of whipped cream or a scoop of ice cream. It can also be served with fresh fruit or a simple fruit compote. Enjoy!
Storage
The cake can be stored, covered, at room temperature for up to 3 days. It can also be frozen for up to 3 months. To freeze, wrap the cake tightly in plastic wrap and then in foil. Thaw in the refrigerator overnight before serving.
