Ingredients

  • 1/2 cup of watermelon puree
  • 1/2 cup of all-purpose flour

  • 1 teaspoon of vanilla extract
  • 1/4 cup of coconut flakes
  • 2 tablespoons of lemon juice
  • 1/4 cup of chopped walnuts (optional)

Instructions

First, preheat your oven to 350 degrees Fahrenheit. Then, in a medium-sized bowl, whisk together the watermelon puree, flour, baking powder and salt. Once everything is mixed, add in the melted butter, sugar and vanilla extract. Mix until everything is fully combined. Now, add in the coconut flakes, lemon juice and walnuts (if using). Mix until everything is evenly distributed.

Line a baking sheet with parchment paper and scoop 2-3 tablespoons of the cake batter onto the parchment paper. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. Remove from the oven and let cool completely. Once cooled, use your hands to form small balls from the cake batter. Place the cake balls onto a baking sheet lined with parchment paper and freeze for 1-2 hours.

When the cake balls are frozen, melt some white chocolate in a double boiler or in the microwave. Dip each cake ball into the melted chocolate and place it back onto the baking sheet lined with parchment paper. Sprinkle with some coconut flakes or chopped walnuts if desired. Place the baking sheet in the refrigerator for 1-2 hours to let the chocolate set.

When the chocolate has set, the watermelon cake balls are ready to serve. Enjoy!
