Ingredients
This simple apple spice cake recipe is a perfect fall treat. It is full of warm spices and bursting with juicy apples. The cake is moist, fluffy and incredibly delicious. To make this cake, you will need:
- 3 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground allspice
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, at room temperature
- 1 cup granulated sugar
- 1 cup light brown sugar
- 3 large eggs, at room temperature
- 1 tablespoon pure vanilla extract
- 1 cup full-fat sour cream
- 2 cups peeled and diced apples
Instructions
Preheat the oven to 350°F (177°C). Grease and flour a 9-inch springform pan. Set aside.
In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, allspice, ginger and salt. Set aside.
Using a stand mixer fitted with the paddle attachment, cream together the butter and sugars until light and fluffy, about 3 minutes. Add the eggs one at a time, scraping down the bowl after each addition. Beat in the vanilla extract.
With the mixer on low speed, add the dry ingredients in three additions, alternating with the sour cream and beginning and ending with the dry ingredients. Beat just until combined. Fold in the apples.
Pour the batter into the prepared pan and bake for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
Serve the cake warm or at room temperature. Enjoy!
