  • 225g self-raising flour
  • 115g butter
  • 50g caster sugar

Instructions

Begin by preheating your oven to 190C/170C fan/gas 5. Grease a baking tray or line with baking paper.

In a large bowl, mix together the flour, butter, sugar, currants, mixed spice and cinnamon until it forms a crumbly mixture. Beat the egg in a small bowl and add to the mixture, stirring until everything is combined. Add the milk and mix until it forms a soft dough.

On a lightly floured surface, roll out the dough until it is about 1cm thick. Using a 6cm fluted cutter, cut out circles of dough and place on the baking tray. Re-roll the trimmings and cut out more circles.

Bake in the oven for 12-15 minutes until golden, then remove and cool on a wire rack. Serve warm, with butter or jam.
