Ingredients

For the cake:
  • 2 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • 1 cup (2 sticks) unsalted butter, at room temperature
  • 2 cups sugar
  • 4 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 cup buttermilk

For the marshmallow frosting:
  • 2 sticks (1 cup) unsalted butter, at room temperature
  • 1 (7-ounce) jar marshmallow fluff
  • 1 teaspoon pure vanilla extract
  • 4 to 5 cups confectioners' sugar

For the chocolate ganache:
  • 12 ounces semisweet chocolate chips
  • 1 cup heavy cream

Instructions

Making the Cake

Preheat the oven to 350°F. Grease and flour two 9-inch round cake pans and set aside. In a medium bowl, sift together the flour, baking powder, baking soda, and salt. Set aside.

In the bowl of an electric mixer, cream the butter and sugar until light and fluffy. Add the eggs, one at a time, and mix until combined. Add the vanilla extract and mix until combined. With the mixer on low speed, add the flour mixture in three additions, alternating with the buttermilk, beginning and ending with the flour mixture. Mix until just combined.

Divide the batter evenly between the prepared pans and spread it with an offset spatula or the back of a spoon. Bake for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let the cakes cool in the pans on a wire rack for 10 minutes before turning them out onto the rack to cool completely.

Making the Frosting

In the bowl of an electric mixer, cream the butter until light and fluffy. Add the marshmallow fluff and mix until combined. Add the vanilla extract and mix until combined. With the mixer on low speed, gradually add the confectioners' sugar until the desired consistency is reached. The frosting should be light and fluffy.

Making the Ganache

Place the chocolate chips in a heat-proof bowl. In a small saucepan, heat the cream until it just begins to boil. Pour the cream over the chocolate chips and let it sit for 5 minutes. Stir the mixture until the chocolate is completely melted and the ganache is smooth. Let the ganache cool to room temperature before spreading it on the cake.

Assembling the Cake

Place one of the cakes on a cake stand or plate. Spread a layer of the marshmallow frosting on top. Place the second layer on top of the frosting. Spread a thin layer of ganache over the top and sides of the cake. Use an offset spatula to create a smooth finish. Pipe small dollops of frosting around the top edge of the cake. Sprinkle the top of the cake with chocolate curls.
