Instructions

Preheat the oven to 300°F. Grease and line with parchment paper a 9-inch round cake pan. In a large bowl, mix the dark and golden raisins, cherries, currants, dates, pineapple, and walnuts. Sift in the flour, baking powder, cinnamon, nutmeg, allspice, cloves, and ginger, and stir until everything is evenly coated.

In a separate bowl, mix the brandy, orange juice, melted butter, brown sugar, eggs, and vanilla extract. Pour the liquid mixture into the dry ingredients and stir until all the ingredients are combined. Pour the batter into the prepared cake pan and spread evenly.

Bake in the preheated oven for 2-2 ½ hours, or until a toothpick inserted into the centre of the cake comes out clean. Remove from the oven and let cool for 10 minutes before transferring the cake to a wire rack to cool completely.
