Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup low-fat buttermilk
  • 1/2 cup nonfat Greek yogurt
  • 1/2 cup vegetable oil
  • 1/2 cup applesauce
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup light brown sugar
  • 3/4 cup unsweetened coconut flakes
  • 1/2 cup chopped walnuts
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup shredded reduced-fat sharp cheddar cheese
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup reduced-fat sour cream

Instructions

Preheat the oven to 350 degrees F. Grease and flour two 9-inch round cake pans. In a medium bowl, whisk together the flours, baking powder, baking soda, and salt. In a separate bowl, whisk together the buttermilk, yogurt, oil, applesauce, eggs, and vanilla extract. Add the wet ingredients to the dry ingredients and stir until just combined.

In a large bowl, combine the brown sugar, coconut flakes, walnuts, chocolate chips, cheddar cheese, cocoa powder, and cinnamon. Add the wet ingredients to the dry ingredients and stir until just combined. Pour the batter into the prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Let the cakes cool for 10 minutes in the pans before turning them out onto a wire rack to cool completely. To make the icing, stir together the sour cream, cocoa powder, and cinnamon in a medium bowl. Spread the icing over the top of the cooled cake. Serve and enjoy!
