Ingredients

For the cake, you will need: 3 cups all-purpose flour, 2 cups sugar, 1 teaspoon baking soda, 1 teaspoon salt, 1 teaspoon ground cinnamon, 3 large eggs, 1 ½ cups vegetable oil, 1 ½ teaspoons vanilla extract, 1 (8-ounce) can crushed pineapple with juice, 2 cups chopped bananas, 1 cup chopped pecans, 1 (8-ounce) jar maraschino cherries, drained, For the frosting, you will need: 1 (8-ounce) package cream cheese, softened, ½ cup butter, softened, 1 teaspoon vanilla extract, 16 ounces confectioners' sugar.

Instructions

Preheat oven to 350°F. Grease and flour three 9-inch round baking pans. In a large bowl, combine the flour, sugar, baking soda, salt, and cinnamon. Set aside. In a medium bowl, whisk together the eggs, oil, and vanilla. Add to the dry ingredients and mix until just combined. Stir in the pineapple with juice, bananas, pecans, and cherries until evenly distributed. Divide the batter evenly among the prepared pans and bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pans for 10 minutes, then turn out onto wire racks to cool completely before frosting.

To make the frosting, beat the cream cheese, butter, and vanilla with an electric mixer until smooth. Gradually add the confectioners' sugar and beat until combined. Spread the frosting over the cooled cake layers. Refrigerate the cake for 1 hour before serving.
