1. Preheat oven to 350 degrees F (175 degrees C) and place rack in center of oven. Butter two 9 inch (23 cm) round cake pans, line with parchment paper, then butter and flour the parchment paper.

2. Sift the flour, sugar, baking soda, salt, and cocoa powder into the bowl of your electric mixer, fitted with the paddle attachment (or with a hand mixer). Mix on low speed until combined.

3. Add the oil, eggs, buttermilk, food coloring, vinegar, and vanilla extract. Mix on low speed until combined. With mixer still on low, gradually add boiling water and mix until combined.
