Ingredients
For the cake:
- 225g soft butter
- 225g light muscovado sugar
- 4 large eggs
- 225g self-raising flour
- 2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- 2 tablespoons of Drambuie liqueur
- 100g raisins
- 100g sultanas
- 50g currants
- 50g glacé cherries, chopped
- 2 tablespoons apricot jam
- 1 tablespoon of milk
For the icing:
- 225g icing sugar
- 1 tablespoon of Drambuie liqueur
- 2 tablespoons of apricot jam
Instructions
1. Preheat the oven to 180°C/160°C fan/Gas mark 4. Grease and line a 20cm round cake tin.
2. In a large bowl, cream the butter and sugar together until light and fluffy.
3. Gradually beat in the eggs one at a time.
4. Sift the flour and spices into the bowl and fold in until combined.
5. Stir in the Drambuie liqueur, raisins, sultanas, currants and chopped cherries.
6. Spoon the mixture into the prepared tin and level the top. Bake in the oven for 1 hour and 20 minutes, or until a skewer inserted into the centre of the cake comes out clean.
7. Remove from the oven and leave to cool in the tin for 10 minutes before turning out onto a wire rack to cool completely.
8. To make the icing, sift the icing sugar into a bowl and stir in the Drambuie and apricot jam until a thick paste is formed.
9. Spread the icing over the cooled cake and decorate with cherries, if desired.
