Instructions

Preheat your oven to 180°C (160°C for fan assisted ovens)/ Gas Mark 4 and grease two 20cm (8in) round cake tins.

In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then add the vanilla extract and milk. Gradually fold in the flour until everything is combined.

Divide the mixture evenly between the two tins and spread out evenly. Bake in the oven for 20-25 minutes, or until golden brown and a skewer inserted into the centre of the cake comes out clean.

Once cooked, remove from the oven and leave to cool in the tins for 10 minutes before turning out onto a wire rack to cool completely.

Once cooled, sandwich the two cakes together with the jam and cream. Dust with icing sugar and serve.
