Instructions:

Preheat oven to 350°F (175°C). Grease a 13x9 inch baking pan and set aside.

In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves and salt until combined. Set aside.

In a large bowl, mix together oil, both sugars, eggs and vanilla until well blended. Gradually add the dry ingredients and mix until combined. Stir in the apples, pecans, raisins and coconut until combined.
