Ingredients

To make this vegan rum cake from scratch, you’ll need the following ingredients:

- 2½ cups all-purpose flour
- 2 tablespoons cornstarch
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¾ cup vegan butter, softened
- 1 cup light brown sugar
- 1/3 cup plain, unsweetened vegan yogurt
- 2 tablespoons dark or spiced rum
- 2 teaspoons pure vanilla extract
- 2 tablespoons flaxseed meal + 4 tablespoons water
- 1 cup chopped walnuts
- 1 cup vegan dark chocolate chips
- ¼ cup vegan white chocolate chips
- 1 teaspoon almond extract
- 2 tablespoons vegan dark rum
- ¼ cup vegan cream cheese
- ¼ cup confectioners’ sugar

Instructions

1. Preheat your oven to 350 degrees Fahrenheit and lightly grease a 9-inch springform pan.

2. In a medium bowl, whisk together the flour, cornstarch, baking powder, baking soda, and salt. Set aside.

3. In a large bowl, cream together the vegan butter and light brown sugar until light and fluffy. Then add the vegan yogurt, dark rum, and vanilla extract and mix until combined.

4. In a small bowl, whisk together the flaxseed meal and water. Allow to sit for about 5 minutes, or until thick and gooey. Add this to the large bowl and mix until combined.

5. Slowly add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.

6. Fold in the walnuts, vegan dark chocolate chips, and vegan white chocolate chips.

7. Pour the batter into the prepared pan and spread evenly. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

8. Once the cake is finished baking, let cool for 10 minutes before transferring to a wire cooling rack.

9. In a small bowl, mix together the almond extract, vegan dark rum, vegan cream cheese, and confectioners’ sugar until smooth. Drizzle the glaze over the cooled cake.

10. Slice and serve the vegan rum cake. Enjoy!
