Ingredients

This delicious vanilla Madeira cake recipe is sure to be a hit in any kitchen! To make it, you’ll need 250g of softened butter, 250g of caster sugar, 4 large eggs, 250g of self-raising flour, 1 teaspoon of baking powder, 2 tablespoons of milk, and 1 teaspoon of vanilla extract. You’ll also need a 20cm round cake tin, greased and lined with baking parchment.

Instructions

To begin, preheat your oven to 180°C (160°C fan assisted). In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, ensuring they are fully incorporated before adding the next one. Sift in the flour and baking powder, and fold in until all the ingredients are combined. Add the milk and vanilla extract, and mix together until everything is combined.

Pour the mixture into your cake tin, and spread out evenly. Place in the oven and bake for 40 minutes, or until a skewer inserted into the centre comes out clean. Once cooked, remove from the oven and leave to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.

Once cooled, you can ice the cake with buttercream or a simple glaze made with icing sugar and a little milk. Alternatively, you could top it with fresh fruit and cream for a delicious summer treat. Enjoy!
