Ingredients

This triple berry angel food cake roll is a delicious and impressive dessert that’s surprisingly easy to make. For the cake roll, you’ll need the following ingredients:

  • 1 ¼ cups egg whites (from 10-12 large eggs)
  • 1 teaspoon cream of tartar
  • 1 ¼ cups granulated sugar
  • 1 teaspoon vanilla extract
  • ¾ cup cake flour
  • ¼ teaspoon salt
  • For the filling:
  • 2 cups fresh strawberries, mashed
  • 1 cup fresh raspberries
  • 1 cup fresh blackberries
  • 1 ½ cups heavy cream, divided
  • ¾ cup powdered sugar
  • 2 tablespoons cornstarch

Instructions

Start by preheating the oven to 375°F. Grease a 17x12 inch baking sheet then line it with parchment paper. Grease the parchment paper then set aside.

Using a stand mixer or electric hand mixer, beat the egg whites on medium-high speed until foamy. Add in the cream of tartar then continue to beat until soft peaks form. With the mixer running, add in the sugar a tablespoon at a time. Once the sugar is fully incorporated, add in the vanilla extract and beat for an additional minute.

In a separate bowl, whisk together the cake flour, salt, and ¼ cup of the sugar. Once blended, sift the mixture into the egg whites. Gently fold the flour mixture into the egg whites. Once combined, pour the batter into the prepared baking sheet and spread evenly to the edges. Bake for 15 minutes or until a toothpick inserted comes out clean.

Once the cake is done baking, remove from the oven and invert onto a kitchen towel that’s been lightly sprinkled with powdered sugar. Carefully peel away the parchment paper then roll the cake up in the kitchen towel. Let cool to room temperature.

In a medium bowl, combine the mashed strawberries, raspberries, blackberries, ¼ cup of the heavy cream, powdered sugar, and cornstarch. Stir until fully combined then set aside.

In a separate bowl, beat the remaining heavy cream until stiff peaks form. Once the cream is stiff, fold it into the berry mixture. Unroll the cooled cake and spread the berry mixture evenly over the surface. Re-roll the cake then wrap in plastic wrap and place in the refrigerator for at least 1 hour.

Once chilled, remove the plastic wrap and slice the cake roll into 8-10 slices. Serve chilled and enjoy!
