Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup butter, softened
- 2 cups granulated sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups whole milk
- 2 gallons vanilla ice cream
- 1/2 cup dark chocolate chips
Instructions
Making the Cake
Preheat the oven to 350°F and lightly grease two 9-inch round cake pans. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. In a separate bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Alternate adding small amounts of the flour mixture and then the milk, stirring until everything is just combined. Divide the batter evenly between the two prepared cake pans, spreading it out to the edges. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
Let the cakes cool in the pans for 15 minutes before turning them out onto wire racks to cool completely. Once cooled, cut each cake in half to make four layers.
Assembling the Cake
Let the ice cream soften slightly and spread it onto the first layer of cake. Top with the second layer of cake and spread more ice cream on top. Repeat with the remaining two cake layers. Sprinkle the dark chocolate chips on top and freeze the cake for at least 2 hours.
When ready to serve, let the cake sit on the counter for a few minutes before slicing. Enjoy!
