Instructions

To make the cake:

  1. Preheat oven to 350°F. Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a medium bowl, combine the sugar and lime zest. Use your fingertips to rub the zest into the sugar until it’s fragrant.
  4. Add the oil, eggs, and vanilla extract to the bowl with the sugar and lime zest. Whisk until everything is combined.
  5. Add the lime juice and buttermilk to the bowl and whisk until everything is combined.

To make the frosting:

  1. In a large bowl, whisk together the confectioners’ sugar, lime zest, lime juice, butter, and vanilla extract until smooth.
  2. Spread the frosting over the top of one of the cooled cakes.
  3. Place the second cake on top of the frosted cake and spread the remaining frosting over the top and sides.
